Fried Egg Sandwiches

This is a typical Sunday night dinner for us. Sometimes on Sunday nights after a low-key weekend I'll spend all day in the kitchen and make something special but usually, we just want something that's quick like this. I always improvise with what I have on hand so feel free to use different types of cheeses, different meats (turkey or bacon are great) or go meat-free and add a diced tomato. I usually serve these with some kind of fruit or raw veggies with ranch and potato chips or some frozen french fries. This "recipe" is another one of my own.



Time: 15 minutes
Serves: 2

Ingredients
  • 4 slices bread
  • 1/2-3/4 of a cup of grated cheese (cheddar, monterey jack, swiss or a mix)
  • 4 slices of thin-cut deli ham
  • 2-4 eggs
  • butter
Prep
  1. Butter one side of each slice of bread.
  2. Grate your cheese and set aside.
  3. On the un-buttered side of 2 slices of the bread, spread out some of the cheese.

Cook
  1. Heat a large frying pan over medium heat for a couple of minutes.
  2. Add the ham and cook for a couple of minutes on each side, until browned.
  3. Remove the ham from the pan and add it to the cheese-topped bread.
  4. Crack your eggs into the hot frying pan. Chris likes 2 eggs on his but I think one is plenty.
  5. Cook the eggs for 3 minutes or so, then flip and cook for another minute. The yolks should still be soft.
  6. Add the cooked eggs to the cheese and ham-topped bread.
  7. Top the sandwiches with the rest of the cheese and the extra bread slices.
  8. Transfer the sandwiches to the frying pan and cook for 3-4 minutes on each side, until cheese is melted and bread is browned.
