Saltine Cracker Toffee

As I've mentioned, I'm not big on baking so this recipe is right up my alley. You don't have to measure much and it takes about 15 minutes. This is a great dessert to put out at a party or take to a friend. It makes great Christmas gifts too. My mom shared this recipe with me and I'm not sure what the original source is but I do hope you enjoy!



Time: 15 minutes, plus an hour or so to cool
Serves: 10

Ingredients
  • 1 sleeve of Saltine crackers
  • 2 sticks butter
  • 1 cup of sugar
  • 1 12oz package of chocolate chips
Prep
  1. Preheat your oven to 400°
  2. Line a baking sheet with foil and lay your saltine crackers in a single layer. You should have enough to just cover the pan.
Cook
  1. Set a medium-sized pot over medium heat and add your 2 sticks of butter and 1 cup of sugar and stir together as the butter melts.
  2. Once your butter is melted, turn your burner up to high and let the mixture boil. When it starts boiling, stir constantly for 3 minutes.
  3. Pour the mixture over your crackers and spread it out so it covers all the crackers.
  4. Place the pan in the oven and cook for 5-8 minutes, until the butter and sugar turn a caramel color.
  5. Take the pan out of the oven and evenly sprinkle your chocolate chips on top of the butter and sugar.
  6. Wait a couple of minutes to let the chocolate chips start to melt, then use a spatula to evenly spread the chocolate out.
  7. Pop the whole pan in the freezer for 30 minutes or in the fridge for an hour or so. Once it's cooled, break into pieces and serve.
