Grilled Zucchini


We love zucchini. It's easy to find year round and adaptable to many different preparations. These take almost no time to cook so they're a great side dish for anything else you might be grilling. My mother-in-law did these recently and added some parmesan cheese to the top just after grilling so I'd suggest that as an add-on if it sounds good with your meal. This recipe is my own.


Time: 30 minutes
Serves: 2

Ingredients
  • 2 large zucchinis
  • 1 clove of garlic
  • 2 TBSP olive oil
  • 1 tsp each kosher salt and pepper
Prep
  1. Preheat your grill to high. 
  2. Trim the ends off your zucchini and cut lengthwise into 1/4 inch thick slices, laying slices on a foil-lined baking sheet.
  3. Peel and finely chop your garlic clove.
  4. Pour 2 TBSP olive oil into a small, microwave-safe bowl and add your garlic to the oil. Heat in the microwave for 20 seconds or so, until the garlic is fragrant.
  5. Spoon the garlic and oil over your zucchini and add 1 tsp each of kosher salt and pepper. Mix it together with your hands until zucchini slices are all coated.
Cook
  1. When your grill is hot, carry your baking sheet out and add your zucchini. Cover the grill and cook for 3-4 minutes.
  2. Use your tongs to flip the zucchini and cook for 3-4 more minutes.
  3. As they're soft and have nice grill marks, remove the zucchini back to your foil-lined baking sheet.
  4. Turn off your grill and keep zucchini covered in foil until ready to serve.
